Ghouly Gummy Eyeballs
Okay, okay. I've got a good one for you...
Q: What treat do eye doctors give out on Halloween?
A: Candy Cornea!!
If you just laughed a little too hard, then I can tell you two things:
1. We should probably be friends.
2. You're likely the kind of person who would enjoy making the ghosts and goblins in your life shriek with delight by surprising them with squishy, realistic, squirm-inducing, gummy eyeballs.
Which is also why #1.
These creepy little eyeballs are a fun and edible way to add just the right amount of fright factor to any dessert you dare to dream up this Halloween season.
What You'll Need
Gummy eyeballs aren't too terribly hard to make, but you'll need a few items that are a little out of the norm to get started. If you're an avid cake decorator, then you may have some of these already in your arsenal. If not, I'm providing links to find them online. Although, I think it's important to mention at this time that I am in no way affiliated with any of these products or businesses. I merely enjoy using them and have found them to be a great fit for my needs in this project.
BALL ICE TRAY: Key to getting a realistic look and ensures that each and every gummy eyeball is perfectly sized and shaped.
EDIBLE WAFER PAPER: This paper is 100% edible and generally made from a rice or potato starch. For this project, it will be used to make the black, vertical sliver pupils of the eye.
EDIBLE BLACK MARKER: To be used for coloring the wafer paper pupils.
GLYCERINE: Adds a touch of sweetness, enhances the squishy factor, and keeps the gummies from drying out/hardening when left at room temperature.
SYRINGE STYLE MEDICINE DROPPERS: If you've had a sick kiddo, then you're likely familiar with these (Ugh). They are available for purchase at any neighborhood drugstore and if you ask nicely, the pharmacist may even give you one for free! For this project, I do recommend having a couple available, but one will do the trick if that's all you have handy.
AMERICOLOR FOOD GEL COLORING: These gel colors are readily available online and at most local cake shops. For my eyeballs, I used "Lemon Yellow" for the irises and "Bright White" for the body of the eyeball, but feel free to get creative and use any colors you like.
OTHER: Scissors, tweezers, cooking spray, 2D piping tip (optional)
Now that you have all of your items collected, you're ready to make our ghouly gummy eyeball recipe.
Let's get started.
Ghouly Gummy Eyeball Recipe
STEP 1: Time to make the pupils! On a piece of wafer paper, use a 2D piping tip to trace a circle with your black edible marker. Color in the circle on both sides of the wafer paper and allow to dry for a moment. Cut the circle out. Then, take your scissors and cut off the four curved sides of the circle to make the vertical slit/almond shape of the pupil. Repeat this step until you have enough pupils for the desired number of eyeballs you want to make.
STEP 2: After preparing the Gummy Eyeball Recipe, take the remaining gelatin mixture (with the vanilla added) and separate it into two bowls. Pour about 75% of the gelatin mixture into one bowl, and the remaining 25% into another bowl.
STEP 3: Using a toothpick, grab a SMALL amount of "Lemon Yellow" AmeriColor Food Gel and gently stir it into the smaller bowl of gelatin mixture. This will be for the iris. Now, add several drops of "Bright White" AmeriColor Food Gel (10-12 drops) into the larger bowl of gelatin mixture. Stir gently. This will be for the body of your eyeballs.
STEP 4: Lightly spray the base of your ball ice tray (the tray that is solid with no holes) with cooking spray. Using a spoon, skim any foam off the top of the clear, non-flavored gelatin mixture to ensure that the gelatin is nice and clear. Fill the medicine dropper/syringe. Slowly drop 3-4 drops of the clear mixture into each of the cavities of the ball ice tray. This layer will be the corneas. Place in the refrigerator for 5 minutes.
STEP 5: Using a tweezers, place a black, wafer paper slit/pupil in the middle of the clear gelatin. Gently press to make sure the paper is making contact with the gelatin.
STEP 6: Skim any foam off the top of the yellow gelatin mixture with a spoon. Fill the medicine dropper with the yellow gelatin, and slowly drop it around the wafer paper pupil, making sure that the sides and the top of the pupil are surrounded. It should take about 6 drops or so. Place in the refrigerator for 5 minutes.
STEP 7: Lightly spray the lid (with holes on top) of the ball ice tray with cooking spray. Place the lid on top of your solid tray base. Fill the medicine dropper with the white gelatin mixture. Place the tip of the dropper through the hole of one of the tray cavities, and SLOWLY squeeze the dropper until the ball cavity is filled, or nearly filled, with white gelatin. Place in the FREEZER for 15 minutes.
STEP 8: Gently take the lid off the base tray. Make sure your gummies do not look watery. If they are firm and not too sticky to the touch, unmold your gummy eyeballs! Use your fingers, your kitchen scissors, or a scalpel to remove any excess gelatin. This is especially easy to do if the eyeballs are super cold, so you may want to pop them back in the refrigerator for 20 minutes or so before removing the excess.
NOTES & TIPS:
There are so many possibilities with these gummy eyeballs. For Halloween, I made these creepy, yet elegant, haunted cupcakes. I mean, it's hard to resist a cupcake, especially when it's staring you down!
